PIN IT FOR LATER!
I hate to be that person that always talks about the weather – but you guys – it has been cold out there. I don't think it was even projected to get above freezing this week.
All I know is that I am ready to be finished with this cold weather.
But since I can't seem to get warm, I'll just keep making all the soup recipes in an attempt to warm myself from inside out. And this Ham and Bean Soup is the perfect way to do that.
And bonus – this is so super easy, fast, and can be a great way to use up leftover ham!
Ingredients in Ham and Bean Soup
I love that there really are minimal ingredients in this recipe!
- vegetable oil – you can use extra virgin olive oil, or any other oil you are used to using for sauteing vegetables.
- diced carrots, celery and onions – because what would this soup be without the trifecta?
- diced ham – this is a great recipe for using up any leftover holiday ham. But even if you don't have leftover ham stashed in your freezer, you can easily buy ham at the grocery store.
- garlic – another must in almost every recipe for me!
- chicken broth – you could also use vegetable broth if you'd like.
- great northern beans – again, this recipe is very forgiving, so if you want to use a different kind of beans, go for it!
- diced tomatoes – one can of these, undrained.
How to Make This Ham and Bean Soup Recipe
This is one of the very easiest recipes ever!!
- Start by chopping your veggies. You'll need to chop carrots, celery and onions. This will take the most time – so if you can, get these done in advance.
- Add some vegetable oil to a hot Dutch oven. Add the veggies and cook until they are starting to soften.
- Once the vegetables are soft, add the ham and cook for a couple minutes to heat it through.
- Add the garlic and cook until fragrant.
- Stir in the broth, beans and tomatoes. Season to taste with salt and pepper.
- Let it simmer for 10 minutes to heat through, and dinner is already ready!
